Easy ribs (don’t be deceived, these are delicious fall-off-the-bone ribs)

Pork back ribs are on sale at Loblaws this week for just $2.99/lb – perfect time to pick some up and try out this recipe.

My friend Michele emailed this recipe to me more than three years ago.  She ensured me that despite the simplicity of this recipe, it will become a favourite.  I’ve made it for a few friends and each of them have made this their primary way of preparing ribs.

For each full rack of pork back ribs:

  • Lay out sheets of heavy duty aluminum foil (each one long enough to fold back over top of ribs to seal)
  • Spread out 1/2 onion thinly sliced
  • Pour about 1 cup of BBQ sauce over onions (Michele loves the PC Beer & Chipotle BBQ sauce as well as the Bulls Eye Chicken & Ribs BBQ sauce)
  • Place rack of ribs meat side down onto sauce and onions
  • Fold over foil and seal all edges well, place foil packet directly on rack in centre of oven
  • Be careful not to tear the foil, and place a tray  below to catch any spills just incase

Bake at 350ºF for 3 hours.  Let cool for about 1 hour (otherwise they really fall apart on the BBQ).  Grill on BBQ and baste with the left over sauce – I also save all the leftover sauce to serve to people for dipping.  Many have found the ribs so yummy even without the BBQ step.

Chili-lime chicken with roasted garlic

This is a simple recipe for Chili-lime chicken with roasted garlic from Chatelaine magazine that turns out well everytime.  I’ve made it for several friends and most have asked for the recipe.  I think it’s a keeper.  Plus the whole chicken is butterflied so it cooks quickly and evenly, and it has turned out very juicy each time I’ve tried it.   Tip:  make sure the butter is at room temperature (not cold, not melted) — it allows the butter to mix nicely with the other ingredients and it spreads well on the chicken.

This is an especially good time to try out this recipe because whole chickens are on sale at Metro 2 for 1 until January 28th — buy 1 at $2.99/lb and get a second free!

Best. Guacamole. Ever.

I love guacamole.  I’ve had lots of good guacamole but this one takes the cake.  Everytime we make this recipe, it gets eaten up lickity split and gets rave reviews.  I got this recipe from allrecipes.com where it received over 1300 reviews averaging 5 out of 5 stars, placing it amongst the website’s top 20 recipes.  Now that’s impressive.

Ingredients

3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

Directions

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavour, or serve immediately.

Iced Green Tea

This is a regular in our house. It’s my drink of choice. I found this recipe online and it’s intended to be a knock-off of Arizona Green Tea with Ginseng and Honey. Yummy. We never got around to buying the ginseng. Dan makes a pitcher of this at least every other night. It probably costs $0.25 to make an entire pitcher (don’t quote me on that). Delicious and refreshing, this one was a keeper from the first time we tried it. Enjoy!

Arizona Green Tea with Ginseng and Honey…minus the Ginseng

8 cups water

1 Lipton green tea bag (regular size)

½ cup sugar (we use about 75% of this)

2 tablespoons honey

2-3 tablespoons lemon juice

¼ teaspoon ginseng extract (we’ve never tried using this)

Bring water to boil. Turn off heat, put the teabag in the water, then cover the pan and let the tea steep for 1 hour.

Pour the sugar and honey into a 2-quart pitcher. Pour the tea into the pitcher and stir to dissolve sugar.

Add lemon juice and ginseng and stir. Chill and serve. This recipe is from www.topsecretrecipes.com.
